TYPES OF VACUUM POUCHES & BAGS
We carry several different types of pouches. High barrier EVOH pouches, standard barrier pouches and zipper pouches with or without EVOH are all designed to work with chamber and retractable snorkel vacuum machines. The boilable pouches are great for the sous vide cooker and other applications that require the bag to be heated in hot or boiling water. Our Micro-Layered® vacuum pouches and Channel Rolls are used in our Best Vac, Fast Vac and Mini 2010 vacuum machines. They may also work with other brands of external clamp vacuum machines such as Foodsaver®, MagicVac®, Royal Vac and VacMaster®. Since these other brands and/or models of vacuum machines may not have as strong a seal as the Fast Vac, Mini 2010 or Best Vac, we are unable to guarantee that the micro-layered® pouches will work properly in other machines.
All plastic material has what is called an oxygen transfer rate (OTR). The OTR of the pouch you use for long term storage is important because the longer the product stays oxygen free, the longer it will last. The OTR of the pouch combined with the possible use of a vacuum sealer and/or an oxygen absorber is the major factor that determines the shelf life of stored food.
The High Barrier Zipper pouches with EVOH have an OTR of 2.3 cc/sq. meter which is a good rate and is commonly used commercially for smoked and dried items such as jerky. Our standard barrier 3 mil pouch which has an OTR of 52 cc/sq. meter. This pouch, or its slightly thicker version , the 4 mil std. barrier, is used by many commercial meat processors for meat storage and/or aging after processing.
If you are vacuum packing meat and freezing it you can use the std. 3 mil pouch. The OTR is slowed almost to a stop when the product is frozen and this pouch will virtually eliminate the freezer burn that meat gets (very quickly, I might add) when placed in the freezer in the traditional supermarket stretch wrap film/tray pack.
